Betty Crocker has finally come out with gluten free baking mixes!  Yes of course they are deserts but they can’t hurt every now and then ;)

Even though the box is for Gluten Free Cake Mix, on the back it has a suggestion for making gluten free cupcakes.  Since I do not own a cake pan and I do not know how a cake would turn out if I made one, I opted for making the cupcakes.  At first I wasn’t sure how they would turn out, but they turned out great.   I cooked them in the oven for about 20 minutes or so (box suggests 18-23 minutes) and the mix made 12 pretty big cupcakes.  It tasted just as good if not better than what I remember cupcakes or cake tasting.  They definitely got this mix right.

For Icing it was a little tricky finding one in the grocery store that was gluten free and that was not “Manufactured in a plant that processes wheat” (those I never trust).  But then I found that Betty Crocker icing is also gluten free.

Also Betty Crocker makes gluten free chocolate chip cookies, brownies, and devils food cake.

    I agree. I made these as cupcakes, too–and they were GREAT! The brownies are also good.

    I’m so excited to see mainstream companies putting out some gluten-free items. It’s a huge step for the gluten-free community!
