Everything Needed to Make Delicious Pancakes!

Pancake night.  Searching through my cabinets trying to figure out what on earth to make for dinner that was not going to take an hour to make or alot of mess to clean up (pretty late to make dinner at 11pm) so least to say wanted something filling but easy to make.  Stumbled upon a bag of Pamela’s Baking & Pancake Mix.  I haven’t made pancakes since our move into our apartment, so pancakes it was :)

Thankfully these gluten free pancakes do not require alot of different ingredients (as you can tell by the photo) and it is a pretty quick clean up once your done.

Needed Ingredients:

  • 1 cup Pamela’s Baking & Pancake Mix (I always put in just a little bit more than 1 cup)
  • One Large Egg
  • 1 TBSP oil (I like to use Vegetable Oil)
  • 3/4 cup water (I prefer to use milk because it makes them thicker…just my preference)

This is something extra I like to add to my pancakes for added Fiber and the health benefits of Flax Seed.  I personally prefer Nature’s Bounty “Cold-Milled Organic Flax Seeds“.  It has a nutty flavor and goes perfect with pancakes (sometimes I even add it in muffins as well).  It suggests 1-2 TBSP a day so I added 3 TBSP to the mix (since I was sharing with my husband).

However If you plan to include this please note that adding this into the mix does make for extremely thick pancakes.  Next time I think I may try just adding the them as a topping.

    Its truly amazing how easy it is to make gluten free goodies with Pamela’s Pancake and Baking Mix. Minimal ingredients and minimal effort always make delicious products. My wife and I enjoy making banana bread (on the back of the BIG bag of the mix) as well as waffles and pancakes. Yummy!
